I'm looking for a program (freeware or shareware) that will convert an MP3 to MIDI for OS X?

If the MP3 in question is polyphonic, what you're talking about is non-trivial, and may not exist. See here.

But look here for some monophonic audio-to-midi software.

Right now, I believe this isn't possible, and even if it becomes possible, MIDI would never be able to store every last little bit of sound in the MP3 (for example, it cannot record the lyrics).

It's a bit on the level of difficulty of "Is there a program that will take the Japanese audio on Godzilla and automatically create an accurate english set of subtitles for it?". Generally, no, not yet. :)

The program you are looking for is called a "transcribing musician". You can often hire them on Craig's List at a reasonable rate.
