Bruch dish with leftover roast beef?

I'm cooking an enormous standing rib roast for Christmas dinner. I expect to have a lot of leftovers. On Sunday I'm cooking a brunch. how can I use the leftover roast beef?

Are there any good brunch dishes that use leftover roasts? Some sort of hash? An egg dish? Should I just serve slabs of cold roast?

Since brunch = breakfast + lunch, why not just slice it thin, heat it up, and serve it with bulkie rolls and fixings?

Best answer: Save the bones for stock.

As for brunch, I vote cold roast beef for sandwiches if you have a slicer. Otherwise, reheat it and serve it with hollandaise sauce/gravy and biscuits. It's a good, hearty breakfast dish.

Best answer: Cold thinly sliced roast beef, arugula, horseradish/mayo sauce, on herbed biscuits. Biscuits can be easily made with bisquick, or the wheat version from Hodson Mills with a bit of thyme and rosemary. Be generous with the horseradish. Hipster sliders, if you will.

Slice thinly. Good bread, capers, grana padano, vino cotto, radicchio.

Little sandwiches on garlic bread, horseradish sauce, with sauteed onions and mushrooms, topped with cheese, warmed under the broiler.

Best answer: This is a pretty good roast beef hash recipe, but it omits one very important thing: a couple of glugs of Worcestershire sauce.

And serving that with a simple horseradish sauce (2 tbsp horseradish out of a jar to 1/4 cup creme fraiche)...mmm!
