C-Map and Freemind come to mind. . .

I've been using Visio for years now. It's pretty easy to use for flowcharting.

Inspiration is the best I've found. Looks very kiddie as it's made for teachers to use with students but it absolutely rocks.

smartdraw isn't bad - but certainly not perfect...

i've been using illustrator this week with snap to grid turned on - which has worked out well.
