The three that come immediately to mind are:

"Untouchable Face" by Ani DiFranco is a classic 'f-you' from a jilted lover song. Many of her songs fall under this category, actually...

That "Unbelievable" song from the 80's, I forget who sings it

Bob Dylan's "Leopard skin Pillbox Hat" kind of sort of works... maybe not, that's more him mocking her then saying 'up yours.'

bink, thanks for that link, and the Death on Two Legs recommendation. It's a classic of the genre, and as strong a first track as you can find.

"Tramp the Dirt Down" by Elvis Costello is just about ideal if the target of your ire happens to be Margaret Thatcher. Even if not, the chorus has general applicability ("when they finally put you in the ground, I'll stand on your grave, and tramp the dirt down.") Elvis's "Love Went Mad" sounds kind of happy-80s-ish, but contains the line, "I wish you luck with a capital 'F'". "The Other Side of Summer" is good if you're mad at certain pop musicians ("Was it a millionaire who said 'imagine no possessions'? A poor little schoolboy who said 'we don't need no lessons'?") or at some other generation ("now you can't afford to fake all the drugs your parents used to take").

"Falling Out" by Ween takes on ex-friends and ex-lovers in a more serious tone than "You Fucked Up."

"Bodycount" by Ice-T contains the call-and-response chorus, "Tell us what to do! FUCK YOU!" repeated a couple times, amid a generally defiant tone. "Straight Up Nigga" from the same album, O.G., also bespeaks an inclination not to tolerate much bullshit. Both are race themed. Come to think of it, "Rednecks" by Randy Newman is a pretty huge "fuck you" to people from the South and the North.

"Cringemaker" by Walter Becker describes a faded but ongoing romance.

Actually, how in fucks sake could I forget mentioning Elvis Costello's best album ever, This Year's Model? That entire album is from beginning to end an absolutely epic "Fuck You" record, and catchy as all get out. It's easily one of the Top 10 (or 20) best rock albums of all time.

If you don't have this album in your collection, you have no business making a "Fuck You" mixtape.

Oh, man! "A.K.A. I-D-I-O-T" by the Hives came on just now when I was running. Practically everything they've ever done fits in the category, but that song, "B Is for Brutus," "Untutored Youth" ("And if you try to tell me what is OK and what is not, it should not be an unexpected scene as I extend my middle right-hand digit and say, 'Hey, would you like lemon or lime with that piece of advice, mister?'"), "Outsmarted" ("Outsmarted - I'm selling you for scrap. Am I Ever Gonna See Your Face Again, by Australian pub rock band, The Angels, has some 'hidden' lyrics that express the sentiment:
The band's first single, '"Am I Ever Gonna See Your Face Again", was released in April 1976, on Alberts label. This song was re-recorded and released in December 1987. It has remained probably their most popular song, despite the passage of almost three decades since its release, partly due to the tradition of audience participation with the song, specifically, shouting the words "No Way, Get Fucked, Fuck Off" in response to the line "Am I ever gonna see your face again?" during the chorus.
Australians find it near impossible to hear this song without shouting the extra lyric. Try it yourself. It's fun.
