healthy party recipes

Do you have a healthy and yummy holiday recipe for a bunch of fun-loving elderly folks with type 2 diabetes and hypertension?

I've been working at a health clinic for an elderly population where the focus is on diabetes and hypertension monitoring and education. Next week we're having our final clinic day and a small party where everyone is suppose to bring food for brunch-time.

I would like to bring something that is in line with healthy eating for diabetes and hypertension. Hive mind: give me your brilliant tips!

I like this recipe from epicurious. It's a quinoa dish that gets a little Indian flair from curried yogurt and mango. It might be a bit adventurous but it is tasty. It also responds well to tweaking and substitutions (no salt, canola oil for peanut, diced cucumber added).

I serve this at parties and everyone loves it.

This creamless creamy soup might also be a nice dish for a fall party.

For something holiday-ish, you could try a cranberry salad (substituting Splenda for the sugar).

Not a recipe, but a tip -- in many recipes (perhaps the soup posted by chickletworks?), balsamic vinegar can be substituted for a large proportion of the salt, making it better for diabetics/hypertensives. I usually still use a little bit of salt, maybe a quarter of what I'd normally use, and add the vinegar until it tastes right.

This chocolate mousse pie tastes wonderful, and it's even better without the crust, as a pudding. I'm a type 2 diabetic, myself, and I appreciate it fully.

Berries, berries and more berries. They taste sweet, yet they actually have little affect upon blood sugar rise and they are low in sodium. Sweeten with some yogurt and Splenda if you like, or even better with some Grand Marnier.
