Vegan enchiladas recipe

What's a recipe for vegan enchiladas that includes either baking soda or baking powder in the tofu filling?
I used to have a great recipe for vegan enchiladas, but I seem to have lost it along the way somewhere, and I haven't been able to find a replacement.
From memory, the filling was made from blending tofu, possibly oil & onion, and definitely either baking soda or baking powder. It was this last ingredient that made all the difference -- it made it lighter and a bit fluffy.
Please help me find this recipe.

I Googled as well as tried ingredient searches on a couple of recipe websites but I couldn't find anything. You might try asking Chef Deb at the Vegsource site. I've never known her to not have an answer to a vegan recipe request.

Response by poster: terrapin: Yes, it can be vegan, but it is a bean enchilada, and I'm looking for a tofu enchilada recipe. It looks good, though.
