Shred Alert: It's a Mozzarosity

We recently received a whole lotta mozzarella that we didn't order in our Costco order--it's 5 pounds of shredded part-skim mozzarella (not the fresh kind of caprese salad). We've made homemade pizza. We've made chicken parmesan. We still have, like, 4.3 pounds of cheese. What else should we do with it?

If there's any still in a sealed bag, you can throw the whole thing in the freezer and it'll be good for another 3 months.

Yeah, freeze it! It will still be good on pizza, chicken parm, etc. I wouldn't do this with a nice eating cheese but totally OK for shredded mozzarella. And three months is probably a good safe deadline but I have definitely used frozen shredded cheese after more than three months and it's fine (if there's a problem with the frozen cheese it's going to be a tastiness/quality issue, not a safety issue).

Also you could make lasagna. You could make a caprese-type salad, it just won't be as pretty.

Finally, you can freeze it -- portion it out and freeze in small containers. You can use it without letting it thaw all the way.

I use that Costco mozz for air fryer pizza.

Tortilla, pizza sauce, cheese, maybe some pepperoni.

In the air fryer at 400 for about 8 minutes.

Quesadillas for any meal or even a snack if you use a 4 inch tortilla.

Freeze it, without question. If you're just using it for pizza topping and whatnot it will be good for months.

I really like grilled cheese made with mozzarella, a slice of tomato, and basil. Can be accompanied by tomato soup.

You can make a kind of cheesy bread, such as these breadsticks heavily infused with cheese.

Also, I don't see anyone mentioning cheesy garlic bread, so CHEESY GARLIC BREAD!

Mozzarella is good in a mac and cheese blend. I regularly throw around a cup in with my cheddar/Monterey jack mix, but I think it could easily replace the Monterey jack entirely.

Cheese sauce, which can be frozen and then defrosted in the microwave and poured over cooked macaroni.

Cheese bread, or cheese biscuits. Make and freeze and then defrost for breakfast.

Cheese toast made under the broiler.

Scrambled eggs with cheese.

Cheese soup, especially one with something like pureed squash or carrots.

Lasagna.

Use some in place of farmer's cheese or cottage cheese in blintzes.

Any kind of cream of chicken/cream of mushroom soup casserole.

Add to polenta

You mentioned chicken parm, but the original Italian parmigiana is one of the very best foods in existence. I have introduced many people to it, and they are all joyfully overwhelmed. Daniel Gritzer's version is near perfect, though I have had even better versions that I haven't quite worked out yet. I think it's about making a kind of confit out of the eggplant. But as said, I haven't mastered it yet and Gritzer's is very fine.
