Malta after 5pm - what to do in the evenings

We'll be in Malta for a week, with 1 night in Gozo. Aside from sitting down for dinner, what is there to do after 5ish when it is dark? Is there a nice place to take a stroll? A low-key bar with live music? Are there places that are not recommended safety-wise? If you have restaurant recommendations anywhere on the islands, I'd love to hear them. We'll have a car so we can get anywhere.

Any other tips, advice, and must-do's are welcome!

I have so very, very little for you; we went forever ago, and we had a floor of an apartment in Valetta with patios on a few sides, so we walked the hell out of everywhere and then mostly rested at night. Mdina is a very nice atmosphere at night, though ymmv on how long it keeps you occupied. Also, there was a really good Chinese restaurant in the middle of Valetta, I believe in Republic Square, and it's at least possible it's still there -- a place called Sesame Dim Sum looks like the place I sorta remember.
