Help me Corfu – narrowing down places to stay!

Dear mefites, I’m looking for some recommendations about Corfu – mostly to do with which area of the island to stay on where we can find self-catering accommodation that is walking distance to a beach. I’m going with my partner (we are two women coming from the UK) and we are looking for somewhere not too noisy or in a massive party area, but ideally close enough to some stores so that we don’t have to drive everywhere. Walking distance to beach also a huge plus. Any ideas on best areas to stay and recommended accommodation are very welcome.
We both like snorkeling, and it seems like the northern part of the island is better for that with more rocky beaches and coves. We will probably rent a car, but also open to places where we might not need to – ideally, we’d be able to use a car to go and explore some of the historical sites/snorkeling/hiking, but have some days where we can go to a beach or for a walk without having to drive. From initial research, I can see the whole coastal part of the island is fairly built-up, but I’d appreciate any ideas regarding nice towns.
So far, I’ve seen some nice places to stay near Dassia (quite close to Corfu town) and then up around the ‘Blue Caves’ and Kaminaki beach (northeast). Our budget is around £150 a night for two people – we want a place with a kitchen, but it doesn’t need to be super fancy. We arrive pretty late at night and I'm a little nervous about driving that late, but I can do it if needed - and/or many places have transfer options or trusted taxi drivers. There are lots and lots of apartments available, but it’s very hard to narrow down an area that would suit us just by using google maps etc. Have you stayed close to Corfu town? Or would you recommend somewhere further away?
