How do I backup the messages on our Discord server?

Our non-profit has been using Discord for operations. There's a ton of messages there now with valuable history. What's the easiest way to download a copy of all the messages on the server?
With a bot - but use this one: Discord Chat Exporter (7K stars on GitHub, last updated 2 days ago).
There's a viewer if you need to view the backup.
