What ingredients are in this Silician sandwich?

I am not sure what exactly are all the ingredients being put into this Silician sandwich, especially the herbs, meats, and cheeses. And would the oils be Italian/vinegar kind of oils?

Probably missed a few things, but I see lots of olive oil, peppers, mixed greens, dried oregano, lemon juice, diced lemon, diced fresh tomato, sliced red onion, olives, sun-dried tomatoes, fresh basil.
Cheeses look like maybe some ground and also shredded Parmigiano-Reggiano, the big soft chunks are probably sheep's milk ricotta di pecora, and the sliced stuff near the end might be provolone.
The meat appears to be prosciutto cotto.

Yes, I forgot the lemon juice that comes in in several layers. Also, the video seems to mention turkey, but even after having watched it several times (this is so fascinating), I can't see where that happens. Maybe there is a choice of turkey and ham, and the customer chooses ham? Hopefully someone better at Italian than me can sort this out.

If that baked ricotta he gets distracted and cuts up in the middle has filled you with longing, you should know that Trader Joe's has a baked sheep's milk ricotta right now. Bake is at 400 for 10 minutes and drizzle with olive oil and hot honey and you'll feel less bad that you can't visit this absolute artist in Siracusa.

Then a few onions, sun-dried tomatoes, and a bit of pickled red onion. And then that final fantastic roll, made with cheese (maybe provolone, definitely in that family of cheeses), raw onions, scraps of all the pickle things and boiled ham.
What a beauty! I can't really eat sandwiches anymore, but I can see when they are done well.
