Glamorous keto poached egg ideas, please! We have an abundance of eggs and having recently discovered an easy way of poaching them, and I would like to make some indulgent meals. Ideas for herbs, sides, something to serve with poached eggs on it? The keto is a big thing! We have one good bread that’s ok, if there’s a great toast serving method or something, but otherwise things like English muffins are out. Hollandaise sauce sounds like it’s probably just outside our skill level.
I'm partial to cheesy polenta topped with fresh steamed asparagus tips and poached eggs.
Also you can make hollandaise in a blender, just pour 8 tbsp very warm melted butter slowly into a couple egg yolks and a splash of vinegar as they whiz around. Finish with a squeeze of tangerine juice for extra zing and some salt and pepper. Takes like 2 minutes total.

Frisee aux lardons is a classic French bistro dish that's also keto. It's a salad of curly endives with crispy pieces of bacon, a mustard vinaigrette, and a poached egg.

Cilbir - a Turkish dish consisting of poached eggs on a bed of garlicky yogurt. I can't vouch for a specific recipe but it looks like there are tons on Google. The cilber served at brunch at Marisol (the restaurant adjacent to the Chicago Museum of Contemporary Art) is one of the best egg dishes I've ever eaten. They serve theirs over top of cooked greens.

Poached eggs are good with dry curd cottage cheese. If you can’t find dry curd, put some regular cottage cheese in a strainer and rinse it well, then press it to extract as much water as you can. I like the firm texture with the runny egg. Don’t use regular cottage cheese, it is to soupy. I also put dry cc in soups because it doesn’t melt so much and provides a nice balancing effect to keto soups wrt textures.

Seconding Cilbir (Turkish eggs) it's excellent. It's great with bread (of course), but you won't miss the bread with enough Aleppo pepper browned butter. Also works with fried eggs, because you're going to cook the butter anyway.

Smoked haddock and spinach with a poached egg. (That recipe calls for a mustard sauce to accompany it, and I'm sure it's good, but I'm also sure you could skip it and rely on the poached egg yolk alone if you'd rather.)
One note of caution: cooking smoked haddock is best done in a non-open-plan kitchen with a really good extractor fan. It's an oddly pervasive smell.

I would call myself an excellent cook but I just can’t hollandaise. The shop bought stuff in jars is just fine, and béarnaise is a nice variant and also widely available. I use it to make eggs florentine with spinach.
Also nice : Sicilian eggs with finely sliced small pieces of cheese, and a little chilli
Asparagus Milanese with a poached egg and sprinkling of breadcrumbs
Poached egg in a mashed potato nest, make it more special with truffle oil.

Just a side remark, but for those using using the vortex technique, consider a substantially easier more failure-resistant method instead. It's quite remarkable.

Cheesy cauliflower purée would be great with a poached egg, I bet. Maybe some endives or arugula with it: some bitter, fresh-tasting green.
You could make a ramen-inspired noodle soup with shirataki noodles and a poached egg (or the more traditional jammy boiled egg) with various other goodies like pieces of meat, seaweed, baby bok choy, etc.

Came in to say shakshuka and spinach Florentine that are already mentioned. I agree that it is fine to use the stuff from the store, but there is also the foolproof blender recipe from Serious Eats, something similar was also mentioned above.
When I was a child, I loved this creamy spinach soup with poached eggs. I probably still love it, but I haven't made it for ages. I would personally use frozen spinach instead of baby spinach, since baby spinach has no flavor and rinsing fresh mature spinach is a bit of a project.
In Bornholm, the traditional way of eating freshly smoked herring is with a raw egg yolk, chives and radishes, it is served on whole rye bread. But I'm pretty sure it would be as delicious with a poached egg instead of the raw yolk, and without the bread or with the bread you can eat.
Another keto-friendly dish that is traditionally served with raw egg yolk, but works very well with poached egg is steak tartare. As with the smoked herring dish above, the garnish is not only there for color, but also for texture and flavor contrast, like crunch and acid and salt. I like pickled shallots and capers and a bit of herbs, like tarragon. If raw meat is a bit over the top for you, make a very rare hamburger (obviously with the best freshly ground meat, and fried in butter on a hot cast-iron skillet), and dress it with horseradish, finely chopped red onions, fine capers, and chopped pickled beets. That would make it a Parisian steak, in the Danish open sandwich terminology. Again, it is traditionally served with raw egg yolk, but works just fine with poached eggs.
Recently I tried making eggs en cocotte. Another fond memory from childhood. For me, who is more and more vegetarian, it was a bit over the top, but it must be perfect for a keto diet.

The obvious ramen soup. Add vegetables - frozen spinach & peas are easy, some sesame oil, maybe hot pepper, then a poached egg. Incredibly comforting. Sorry, not keto, you could make miso broth and add veg, then egg.

Poached eggs are pretty great over almost any combination of roasted vegetables. Bonus if you like your poached eggs on the runnier side since it naturally sauces the veg. Obligatory Kenji Roasted Vegetable Guide.
