Please give me your chicken rice soups

I'm looking for great chicken rice soups to make.

I've been on a chicken rice soup kick lately. I've got the standard comfort food version down (I add dill to it so it's almost like matzoh ball soup, but with rice instead), and I've done a decent congee/jook with chicken thighs, but I'd love more versions from around the world.

Especially interested in versions that bring in different flavor profiles from world cuisines. Rice noodles are ok too (thinking about trying my hand at chicken pho) but I'm mostly interested in rice itself. Veggies are great, and so are herbs/spices.

Not looking for very creamy recipes (no rouxs) but coconut milk or a dash of cream is fine.

I am interested in stovetop OR instant pot recipes.

Have you tried avgolemono? The creaminess is from egg yolks added near the end, it's very simple.

I don’t know what cuisine it may or may not be from, but my childhood friend’s mom used to do chicken and rice soup with lemon, smoked paprika, and tomato paste. It was like standard chicken and rice soup but there was also peas in it, but she would toast the rice uncooked in a pot with some butter and tomato paste, add smoked paprika, then pour in all the broth and veggies and chicken and once the rice was cooked add a bunch of lemon juice and zest. I feel like it’s some kind of Mediterranean?? Anyway, I loved it and think all subsequent chicken and rice soup is boring. I’ve made my own version with some chopped frozen kale for added nutrition when sick and it held up to the memory.

Seconding the recipe noted by lydhre above. It's really good, you really have to zest a full lemon plus add a good squeeze of juice, it takes the soup from fine to great.

I saved this recipe for Nana’s Chicken and Rice Stew from Bon Appetit. I haven’t made it yet, but the picture looks delicious.

We have been eating a lot of chicken souse (Bahamanian) lately. Well, our version of it anyway, so warnings that it's probably not super authentic. I think you could throw cooked rice in at the "delicate veg" stage (see below) and it would be awesome.

Add about 1-2 lbs of chicken thighs to pot - barely cover with water. Boil until cooked, around 20 mins or so (we usually move from boil to strong simmer after about 5-6 mins).

After chicken is well cooked, you are supposed to rinse it and pour out the boil water. But we don't, so it becomes a rich broth.

Add 1-2 tbsp whole allspice (or about 1/2 tbsp ground allspice), 2 minced garlic cloves and "hearty" vegetables. Specifically, we add 2-3 cubed potatoes, 1/2-1 onion (cubed-ish), and 3 (or more) carrots cut into chunks. Add water until everything is just covered again.

Keep at near-boil/strong simmer until potatoes are cooked through - usually 15 mins. Add "more delicate" veg - we add a few stalks of cut up celery, and torn up curly kale leaves. I know kale isn't delicate, but if you cook it too long it goes from bright green to sad olive. Cook another 5-7 mins.

At serving, splash in some lime juice, add salt to taste, and some red chili is great if you like things with a kick.

SORTed Food's Hainan Chicken Rice. It *does* start with a whole chicken, a big pot, and making stock while poaching the chicken. Chicken fat from the stock is then used to fry the rice, infusing the flavor back into the rice. Then chicken stock is used to finish the rice.

Moroccan harira? The standard recipe has a lots of chickpeas and only a little rice or vermicelli, but you could use the same flavours and change the proportions.

You could try chicken long rice from Hawaii, though “long rice” is not actually rice.

I really love this recipe for Aguadito de Pollo (Peruvian Chicken Soup), “basically a chicken soup with potatoes, rice, and peas and pureed cilantro”. I’ve found it’s really good if you’re feeling a bit under the weather and always delicious, especially if you are a cilantro lover!
