Help me shrub - southwestern edition

I was all ready to make a batch of lavender kumquat shrub for a gift when I noticed that my kumquat tree doesn't currently have any ripe fruit. Do you have any good ideas for a shrub with a southwestern US/NW Mexico-inspired flavor?

Lime Lavender would be great!

If you like a little spice in your drinks, blackberry chipotle or chili lime are classic combinations and would work fairly well in shrubs.

I’ve done a nice shrub with morita chiles and lime. Also cilantro and blackberry with balsamic.
