Help me find a quote about the origin story of famous foods

I remember reading a quote (or hearing a bit, maybe) about how the origin stories for famous foods are overwhelmingly (1) it was an accident, or (2) the chef did it to spite an annoying customer and it turned out to be great. Google turns up lots of listicles and mentions of accidental discoveries, but not what I am after. Can anyone point to this quote?

On closer reading, I see you aren’t looking for examples but a larger story. Still, that story might give you some leads.
