Favorite vegetarian + thyme recipes?

I made an onion soup with thyme, butter and a couple bay leaves yesterday and it was a-ma-zing. So good. I think I’m in love. What other recipes might I like?

I don’t have an oven still so it’d have to either use a stovetop burner, microwave, and/or rice cooker, and I’d prefer vegetarian recipes. Anything come to mind? Thank you!

I like carrots with butter and thyme. You can slice the carrots and cook them in a skillet, adding the thyme toward the middle of the cooking. No need to boil.

Add thyme to biscuit dough or bread dough.

The first recipe in the book "12 Months of Monastery Soups" is all about mushrooms and thyme and it is fantastic.

Do you eat cheese? I make a caramelized onion, gruyere & thyme pizza that is delicious! (Thanks for the reminder- I was just casting about for a Thanksgiving appetizer!)

Mushroom Duxelles. Really good on toast, or in any dish where you want a boost of umami flavor, risotto, pasta, etc. You can freeze in small portions and use as needed.

That recipe calls for white button mushrooms, but I use creminis. You can also use a mix of mushrooms.

For a fancy holiday appetizer, spread on puff pastry, roll up into a log, slice, and make pinwheels.

I'll do sort of French-ish white beans with shallots, thyme, butter and a whole bunch of white wine, they're divine and go great with mushroom duxelles as linked above. Artichokes with garlic and thyme are incredible - you can do it as like a stuffed thing with breadcrumbs or a compound butter thing. When I let myself make creamed spinach I like to stir nutmeg and thyme into my cream sauce.

Fondant potatoes are a slightly fiddly, but fancy way of preparing said vegetable. You cook them with butter, thyme (and other herbs if desired) and stock (veg or chicken). Recipes here and here.

Split pea soup has a ton of flavor even if you don't add much, but I always add thyme and bay leaves to mine.

Mushroom risotto with lots of thyme is always wonderful. The seriouseats recipe does not call for thyme. This is a mistake, and I add it when heating the broth and also when frying the onions in butter / toasting the rice.

This white bean and onion soup calls for rosemary, but I think it would work well with thyme. Just use vegetable rather than chicken broth.

Fresh thyme is great in bean salads. My not-traditional-Texas-Caviar-anymore favorite is black-eyed peas, chopped onion and bell peppers, a chopped hot pepper if you're into it, lime juice, olive oil, and thyme.

I'm planning to make this White Bean Soup for dinner tonight. It has rosemary and thyme in it. I would imagine you could remove the rosemary and just amp up the thyme a bit for a delicious substitution.

Add in some No-Knead Focaccia and add thyme to those as well.

Seconding cabingirl that Split Pea Soup is a great showcase for thyme. I roughly follow Ina Garten's recipe. Add a bay leaf and 3/4 tsp of thyme. Per your preference for vegetarian recipe, just use veggie broth in place of chicken/ham stock; it will be just as delicious.

Lentilles du Puy: French Green Lentil Salad Recipe
I make this all the time (or something similar depending on what I have in the fridge). It's delicious.
You can also cook the lentils as in the recipe, add some crushed tomatoes to taste and make a pie-top of mashed potatoes or store-bought piecrust for a delicious vegetarian or vegan pie (depending on how you make the top).
