Gluten Free Waffle Recipe Recommendation

Does anyone have a delicious gluten and dairy free waffle recipe? The Platonic ideal is Trader Joe's frozen gluten free waffles.

I live in Australia which has no Trader Joe's. My children love Trader Joe's gluten free waffles. I loved the convenience and price of $1.99. They were tasty enough to be eaten by gluten loving people i.e., me and the daughter. I am willing to invest in a waffle maker to make this happen.

Because I am in Australia any short cuts such as pre made gluten free baking mix like Bob's Red Mill is not available. Any shortcuts need to be available in the Australian market.

Bob’s Red Mill flours are available in Australia, but any decent non-bean “1:1” or “cup for cup” premix should work (or look at King Arthur flour or Cook’s Illustrated for their homemade blends). I’d try something like this recipe with almond milk (I make a similar recipe but use dairy and it’s great GF - fed to five hungry teens last weekend and none of them knew it wasn’t wheat). Mine is a shy cup of flour, cup of buttermilk (sub almond), an egg, 2.5 Tablespoons oil, pinch salt, half a teaspoon each baking soda and baking powder. Bake on a fairly hot iron, not Belgian style but regular waffle iron. Add sugar if you want them sweeter, and maybe vanilla. But your major stores like Coles and Woolworths should have a good flour you can buy as a place to start.

I've never had the Trader Joe's GF Waffles (I live in Canada and we don't have TJ either) but my favourite recipe has been this one from America's Test Kitchen / Cooks Illustrated. It requires you to make your own GF flour but I can assure you it is worth the effort. They freeze acceptably and reheat all right (a little dry but you just use more maple syrup or whatever Australians use).

I've made these Pamela's mix ones and wanted to mention that the technique worked really well, in case you could apply it to your eventual ingredients ... you whip the egg whites into a meringue and gently fold it in for fluffiness.

I was about to recommend the same ATK recipe linked above, but unfortunately that one's not dairy free. I'm not sure that it'd be very easy to sub-out the dairy, either, but it is delicious if you want to give it a try.
