Universal knife block suitable for under-cabinet use

I bought a new universal knife block (this one) but the angle at which knives protrude from it (about 15°) is too shallow to place it under my cabinets because, when I try to take knives out, they whack into the botton of my cabinet. I'm therefore looking for a universal knife block with a deeper angle to avoid this problem. Any suggestions? Much thanks!

Maybe a freestanding ‘easel style’ magnetic block?

Not sure what the base/underside looks like - or where your cabinets are - but you might be able to screw/glue a strip or two of batten along the back edge. This could achieve the 'deeper angle' that you're after.

Cheap fix: Can you use cedar shims or a couple non-slip door stops ($5 version, 79¢ version) to shim it up and tip it forward so the knives will come out freely? Or will that tip it too far so it becomes unstable?

Lay it on its side.

I had one of these and shimmed it as others have recommended and that worked well. However, the little koosh things would break and jam together, making it hard to get the knives in. I eventually gave up and got a standard block.

Anyone with a table saw could cut you some triangular shims of any desired angle, too. Then glue them on the bottom of the block. If you care about looks, stain to match (or better, contrast!) first.
