Hashimoto's diet resources for vegetarians

I have Hashimoto’s thyroiditis and a gluten intolerance. I am also a vegetarian. Help me find some good cooking resources.

I’m currently trying to change my diet to better address the Hashimoto’s and gluten intolerance, and am looking for some resources that have good recipes/advice/strategies to help me achieve my goals. I’ve looked at some cookbooks that are targeted at people with Hashimoto’s, but the recipes tend to be primarily meat based. I’m looking for vegetarian and/or vegan and gluten-free resources. I’m fine with physical books, ebooks, blogs, or anything that might be helpful.

Brittany Angel was also diagnosed with Hashimoto and has developed a ton of recipes ( Mostly dessert and bread recipes, but her cookbook also had recipes for condiments, savory baked items that could be modified to accommodate different food allergies and sensitivities ).

I'm a vegetarian doctor with Hashimoto's. You don't need to eat a particular way because of it. Might help you with your search if you only look for gluten free vegetarian cookbooks!

The Corinne Nijjer podcast has three episodes that are interviews with people who eliminated symptoms of Hashimoto's with a vegan diet. This diet eliminates processed foods as well, including oil. It’s been a while since I listened to these episodes, so there may be other details for what these people did.

This is anecdotal, so there aren’t studies showing it works. But since there aren’t studies, statements that it won’t work are equally unsubstantiated. People thought it was self-evident that diet couldn’t reverse coronary artery disease until Dean Ornish did studies (published in The Lancet) and showed that it can. Worst case scenario is you spend a few months not eating some foods you like.

The Forks Over Knives website and the Forks Over Knives cookbook are both great resources for recipes, as is the How Not to Die cookbook. They aren’t gluten free, but both should have lots of recipes without gluten.
