Unlocking Sony Xperia J & Factory Restore

I have inherited my wife's Sony Xperia J phone which she purchased from and used on our province's service provider's network. I want to wipe her stuff off of it, untether it from the provider, restore the phone to its original settings, and put a 7-11 pay-as-you-go SIM in it. How do I make this happen? There are plenty of Google results to do such things, but I don't know enough about phones/networks/Android to tell credible resources from sketchy. Thanks!
