To freeze or not to freeze

I made a delicious batch of zoupa toscana yesterday. The recipe has you finish with heavy cream. There's more than enough of the soup. Can I freeze the rest in containers?

Absolutely fine. Leave room in your container for expansion. Heat thoroughly after you unfreeze it, so the cream coagulates nicely. It will be delicious.

Nthing that this is totally fine. In fact, I just pulled a batch of that very soup out of my freezer and reheated it earlier this week. I made the soup in February and it was absolutely delicious in October.

The cream may separate upon reheating, but it should taste fine. Mixing a little more cream in when reheating can revive the creamy texture.

Guess what I'm having for my dinner tonight?

Thanks for posting. I would have never heard about this delicious sounding dish otherwise.

Just to add to the unanimity, yes - I've frozen all kinds of soups with dairy and found them to be delicious upon unfreezing.
