In search of confidential dictation

I am looking for options for confidential dictation (beyond what Google can find for me). Please give me your personal recommendations for solutions.

Bonus points for Mac-compatible software that can handle full paragraphs or even pages at a time--Apple's native dictation feature seems to crap out after a couple of sentences. My computer is 7 years old, though, so if you've had a better experience with a newer Mac, please tell me. I'm replacing the dinosaur in a couple of months.

Accuracy is important, of course, but I am OK with something that I have to go back and proofread manually.

If a human is really the best way to go, I'll gladly take recommendations here.

Dragon Naturally Speaking is built for this purpose and has a Mac version.

I have a friend in Scotland who already does this. I can give you her name.
