How to make the best of a ten pound bag of kasha...

I recently discovered buckwheat. Great! I ordered a giant bag of it from Amazon, and instead of raw buckwheat I ended up with ten pounds of kasha. Oops. What can I do with it now other than eat it for breakfast? Difficulty: no eggs or dairy.

I like this kasha salad -- you can put whatever veggies in it you like.

I grew up on kasha varnishkes as a side dish. Most recipes are dairy-free, since it's a common side dish with meat for Jews who keep kosher. Egg-less recipes are harder to find but still out there (here's one: http://www.reformjudaism.org/jewish-life/food-recipes/vegan-kasha-varnishkes)

What about a kind of kasha pilaf or risotto? This recipe calls for egg, but as a sorta-veganish person myself, I'd just skip it. Toast the kasha a bit in fat, just as you would for risotto, and then follow the rest of the directions.

Anywhere you would normally use rice. I mean anywhere. Soon it will have a neutral background taste, and it has a lot more nutritional value than rice. Source: my ex is a diabetic Russian Jew, and now I too subsist on kasha.

Seconding kasha varnishkes. I never do it with eggs and it comes out fine; just toast the kasha without the egg.

Pretty much cook it like rice. I love it plain next to meat.

If the grains heat up when microwaved, sew some cloth pouches and make microwaveable hand warmers! You can do this with corn kernels - it keeps your hands warm and smells nice, too.
