Good turn-based games to play online with friends?

What are the best turn-based games one can play with a group of people? Ideally these would be web-based games that allow you to set the waiting period between turns and that don't require a GM.
My friends and I are almost done with a game of Diplomacy (played through Backstabbr). It kind of fizzled out but was still an enjoyable experience.
Things I liked:
-Being able to discuss moves with other players, alliance-building
-Simple interface
-Good rules explanation on the site
-Really liked the theme
-Only need a web browser to play -- no need to download an additional program
Things I disliked:
-Wait period was too long -- it would be great if we could choose between one hour and one day
-The game started to drag when people left without quitting. This made the game take FOREVER.
Any suggestions would be much appreciated!

It's not web based, but Stars! is old enough that you can probably run it in emulation on almost any computer produced in the last 15 years. I'll let the fact that it's a 19-year-old computer game that people still play speak for itself.
