Third party Plesk/Parallels Server Administration

Our VPS webhost was acquired by a larger firm, and slowly moved from managed hosting to unmanaged hosting. Our Plesk/Parallels server was compromised last night. In order to get it back online, I had to backup the old server, then have it wiped/reset.
I'm looking for a third party server administrator to help move email files from the backup to the accounts on the reinstalled server.
I will be shopping for managed hosting providers in the near future (and am open to recommendations).
Most of the support options I'm finding online are tied to a particular hosting plan. I need an outside agency I can vet, then employ to help me recover the data.
I am a web developer, well acquainted with FTP, but this goes deeper into the bowels of the server.
