I lived in rocky mount for a few years.
I loved their Imperial Center, a community center with a very good visual arts gallery, science museum for children and they host theater events.
I liked Battle Park, which has some easy trails by the river.
Rocky Mount is lacking in good restaurants, but we would go to Hing Ta, a Chinese place on 64. They have a good buffet and the service is nice. Review here
I wish I had more suggestions, but there's not a lot going on there if you don't have friends/family there.

I grew up one exit down the highway from Rocky Mount, in Nashville. Rocky Mount is a pretty quiet little "city" that's very heavy on the chain restaurants and big box stores, and not much else.
If you're not in the mood for Olive Garden or Texas Steakhouse, there's a little restaurant at Church & Sunset called Central Cafe that's got good burgers, and another little restaurant further down Sunset called Westridge Cafe, with tasty homey Southern food. Get the chicken pastry if they have it when you're there.
As already mentioned, the Imperial Center is neat, and Battle Park can make for a lovely walk (but during daylight hours only!). The Dunn Center at NC Wesleyan is a good theater, and they host big-name productions and concerts as well as performances from their own (very good) drama department. There's also a farmers' market with crafty stuff in addition to local produce.
Bizarrely, there's a pretty great coffee roaster in Rocky Mount (you can get their beans at the farmers' market), but nowhere to get good coffee to drink. (There's a Starbucks--inside Target. There's also a coffee shop called Via Cappuccino, but trust me, you're better off with Starbucks.)
If you find yourself in Nashville and still not in the mood for chain food, Town & Country Diner is yet another little place with homey Southern comfort food (there, get the country-style steak--or the chitterlings if you're feeling adventurous), and Lam's Garden (tucked in next to the Lowe's grocery store) has surprisingly tasty Chinese food.
If you require fancy food of any sort, you'll have to drive 25-30 minutes to Wilson for Quince or 20 minutes Elm City for The Legacy. If you require further civilization, Raleigh has a larger variety of restaurants, museums and historical attractions, and a decent nightlife, and is about 45 minutes away.
