Gift me with your best tamarind-inclusive recipes!
I'm a huge tamarind fiend and recently bought 2 containers of tamarind concentrate. I made Indian curry with it just tonight, but I'd really love to know what else I can do with it! An online search didn't really yield the results I wanted (I already know about chutney). Please tell me everything!!

Best answer: When I think tamarind, I think soup: Soup with chickpeas, soup with squash, soup with pork (this one uses a ton and has a list of more soup recipes with tamarind!)

Best answer: Tamarind agua fresca. Just add water, sugar and ice cubes to taste. You can also make tamarind popsicles!
I love it as salad dressing, it's great with fresh vegetables such as lettuce, jicama and carrot.

Best answer: Seconding pad Thai and tamarind agua fresca. This Chowhound thread has the Cook's Illustrated pad Thai recipe, which I've been making for years. It always comes out well. The downside is that it makes it hard to eat pad Thai in restaurants now because this is so much better.

Best answer: Tamarind pulled pork is awesome. Sauce: pour 1 cup of boiling water over 1 cup of tamarind pods. Dice half a red onion really small. Saute. Dice up a habanero, add to the onion. Add two cloves of garlic, chopped. Strain the tamarind into the pan. Add 2 tablespoons of sugar and several grinds of black pepper. Additional seasoning to taste.

Best answer: Tamarindos are delicious. I've never made them myself, but this recipe seems reasonable. This recipe uses pulp, which might be more like what you have.

Best answer: Seconding sinigang and thirding agua fresca. The former is my go-to cold and stuffy head remedy and the latter is a delightful beverage I can't get enough of on warm, summery days.

Best answer: Instant comfort food for me: 1/2 cup of sweet soy sauce (kecap manis), 1 tbs tamarind concentrate to dip, fried tofu, tempeh, prawn crackers, raw veggies, anything basically.

Best answer: Vietnamese Sour Soup - Canh Chua - has a tamarind base. Here's a recipe that I keep meaning to try. I believe you can substitute 2 tablespoons of tamarind concentrate for the 2 oz of lump tamarind.

Best answer: Although I messed up cooking it the first time round, this recipe for Chicken Pathia is absolutely delicious. I'd substitute the 6 tablespoons tamarind extract for just 1 (and add lemon juice/brown sugar to adjust to your liking).

Response by poster: @marsha56, the recipe you provided was absolutely amazing. I served it tonight as a first course before green salad with basil and coconut dressing, brown rice, and lemongrass chicken. Please do make it--I was totally blown away!

Best answer: Take some tamarind paste, loosen it up with a bit of water. Put a fish in it. Add some salt. Grill or fry the fish. I like this with rainbow trout.
