Is there any nice software that works well with a MP3 library on OSX that is like iTunes was before iTunes became bloated and awful?

Well, there's this, which almost became iTunes - no idea if it still works:

There's this. Pick a version that you think isn't bloated.

Pick a version that you think isn't bloated.

I think all their installers are Windows-only, which doesn't answer the asker's question.

Though iTunes can be a necessary evil, if you're just looking for a lightweight music player check out Vox. It has some nice features, like auto-playing the next song in a folder. But, it has no library features.

Cog should suit your purposes.

Does Media Monkey have a version for OSX? I loved it on Windows.

For what it's worth... You can also use the preferences in iTunes to hide some media types you don't want shown.
