A gift for a nutrition school grad?

What's a good gift for someone about to graduate from nutrition school?
A friend of mine is about to finish up her time at the Institute for Integrative Nutrition, and I'd love to find something small but thoughtful to commemorate the moment.
She took the courses mainly for personal development — she's not about to embark on a brand new career (unlike most students of the school). But she feels like she has learned a ton and is very glad she made it happen for herself.
Any ideas?

If she's interested in cooking, you could get her a set of rare or underused spices--then she could explore some new recipes that incorporate said spices.

Seconding the idea of a rare spice or rare ingredient. I have a dietician friend whose challenge is (was? it might be over now) to "discover" a new vegetable every week.
You could also make a short cookbook for her, in line with her area of study.

A Vita-mix blender? I read Gwyneth Paltrow has one and she's purportedly always eating kale and nutritious foods.

A nice scale? Mine is a Salter and I've used it for years and LOVE it. Can't find the exact model, but here are some similar: 1 2 3

Oops, I guess I should make that clear that I mean a digital kitchen scale for measuring ingredients, not a bathroom scale for standing on.

After all that hard work and study, how about a box of chocolates. Really nice ones. Just because you know how to eat healthy doesn't mean you wouldn't like a treat every now and then.
