Cookies without eggs?

Do you know any easy-to-make cookie (or just dessert) recipes that have no eggs? Bonus points if there are no ingredients that would require a trip to the grocery store (no buttermilk, no special chocolate, no fancy egg-substitute, etc.).

Shortbread. All sorts of recipes here. Try the ones with raspberry jam.

I'm just now finishing some kick-ass homemade shortcakes with strawberries and whipped cream.

In a food processor:
Mix 2c flour, 1T baking powder, 3T sugar, 1/2t salt.
Cut up 6T COLD unsalted butter (3/4 stick) into chunks. The key here is COLD. Add to the bowl and pulse a few times- don't overdo it. After a few pulses, it'll look sandy. Add 1 1/4c (1 small carton = 1 cup) heavy cream, mix with a fork until it just comes together. Again, don't overwork it.

On a lined baking sheet, put 1/3c balls of the dough and flatten them. You'll comfortably get 4 on a sheet, the recipe will give you 6-7. Bake for 15-20 minutes at 425, until golden brown. While they're baking, whip the rest of your cream with some sugar and vanilla.

Let the shortcakes cool, then cut in half lengthwise. Fill with berries and whipped cream.

Boiled Chocolate-Oatmeal Cookies

2 cup granulated sugar
3 tablespoons cocoa
1/2 cup milk
1/4 cup butter or margarine
3 cups quick-cooking oats
1 teaspoon vanilla extract
1/2 cup peanut butter (any kind, I've use plain and crunchy)
1/2 to 1 cup nut meats, if desired


1. Bring to a boil sugar, cocoa, milk and butter. Cook 1 minute.
2. Remove from heat and quickly add oats, peanut butter, vanilla and nuts.
3. Drop by teaspoonful on waxed paper. Let stand 1/2 hour until cool (if you can).


My mom used to make these for the school fair. This is not her exact recipe, but very similar, her's had a pinch of salt.

I was just about to post a variation of JujuB's recipe!!! My mother called them "Mudballs" Our recipe used 1/2 cup cocoa and no milk. Obviously it is a very forgiving recipe.

Scones. OR:

The cupcake recipes in "Vegan cupcakes take over the world". If you don't have soy milk, I guess you could use regular milk. Most unusual ingredient: vinegar for curdling the milk (to make "buttermilk"-like stuff).

I've had good luck with the following egg substitute in baking - dissolve 1T cornstarch in 3T warm water, mix in 1T vegetable/canola/corn oil to replace one egg. I've used this in cookies and coffeecakes. Doesn't work in those cakes which ask for divided eggs, as you might expect. (I use this a lot, as I bake often for a group with a couple of egg-sensitive people.)

A substitute for 1 cup of buttermilk is 1 T vinegar or lemon juice in the bottom of a measuring cup, add milk to the 1 C line. Or you can use plain yogurt or sour cream cut with a little milk to the proper consistency.

Most shortbread recipes and many of those for scones don't call for eggs.

I point you towards the Tool song Die Eier Von Satan. It's very definite about there being no eggs. And you can probably leave out the knifetip of Turkish hash if you don't have any to hand. If you want to be more conventional, it's basically the same as Mexican Wedding Cookies.

I make a lot of fruit pie. It's naturally egg free, made from whatever you have around the house, and it's really easy to make it vegan. ALSO non-kitchen-people tend to be really impressed by it even though it's ridiculously simple.

But I don't know how likely you are to have Golden Syrup?? I do, and this is why :)

SR Flour, Castor Sugar, Salt, Butter, Milk, Water, Golden Syrup.

JujuB's recipe is nearly identical to a recipe my Mom makes.

For the variation I know, double the cocoa powder and butter, half the milk, increase the peanut butter to 3/4 cup and omit the nuts.

I've been thinking about tossing raisins into them mix.
