What are some good sites for learning about future book releases?
I am looking for something from the publishing side of the industry rather than the selling side. Maybe even a known works in progress type reference.

I am a radio producer who gets tons and tons of books from publishers (we use a lot of them each year thanks to interviews and discussions). I try to get on as many mailing lists as I can to get 'upcoming...' catalogs, but another resource that is out every week is "Publisher's Weekly". Progress type is very hard, because the last thing most publishers want to deal with is gossip about the progress of a book. That is going to be much more difficult to get and I doubt if there is a single publisher out there that would provide that information.

Maybe keep up with GalleyCat or this Barnes & Noble list.

For what you're describing, Publisher's Weekly would be up there.
