What should I make with very fresh saffron?

I’m growing saffron crocuses and they flowered for the first time this week!! I’m harvesting and drying the threads as the flowers bloom. What super-special thing should I make with this fresh homegrown saffron? I’m an omnivore and I already know about paella - go!

Traditional Bouillabaisse (boiled-down) is made with a saffron broth. They also have a chicken version if fish soup is not your thing.

I love this recipe: for persian rice.

Omg shrikhand. It all depends on the quality and thickness of the yogurt though, but if you like creamy desserts, OH MAN.

re: Persian Rice...if you want to see this made, the delightful Samin Nosrat's Netflix series Salt Fat Acid Heat features this recipe in the Heat episode. She makes the recipe with her mother.

I grew up with my Indian aunties making wonderful saffron rice and saffron desserts, so I'm a bit ashamed to say that the last thing I made with saffron was "Sisters Soup" from "A Feast of Ice and Fire" (the Game of Thrones cookbook). However, I love seafood, and it was delicious, with the saffron definitely taking it to another level. Your feelings about seafood and tie-in cookbooks may vary.... (I'd put the GoT one behind my absolute favorite "Lobscouse and Spotted Dog" from Patrick O'Brian's Aubrey/Maturin series, but unlike some other tie-ins, most of the recipes I've tried worked and were tasty.)
