Evaporate this milk and bake this chocolate!

I've got a can of evaporated milk and some bars of baking chocolate (aka, unsweetened chocolate). What should I make?

I rarely use either of these ingredients, so I don't have many recipes. Also, trying to find recipes that use baking chocolate in particular is really hard.

You can assume I've got a good stock of most other baking ingredients.

Chocolate mould! It's a sort of grown-up blancmange.

2 400g tins evaporated milk
2 100g bars cooking chocolate
4tbsp cornflour
3-4tbsp caster sugar

Half all but half a tin of the evaporated milk with the chocolate in a microwave until melted (about 4 min on full power for me). Blend the cornflour with the remaining evaporated milk until smooth and add to the mix. Return to the microwave, whisking every two minutes with a fork until the mix is thick (you want it just a bit too thick to pour like custard - about 8-10 minutes). Add caster sugar to taste, allow to cool to room temperature, then cover and leave to set in the fridge.

you can make fudge sauce and I'm almost sure there are fudge candy recipes that are based on those, i'll post if I find,

Fudge is definitely the standard answer to this question. Here are Carnation's fudge recipes, but if fudge isn't your thing, just poke around on the Carnation website and see if anything else tickles your fancy. Keep in mind, you don't have to make just one thing. You can use the evaporated milk in one recipe and use the chocolate in another (say chocolate chip cookies).

If you're just looking to use the chocolate itself, these brownies are a good option.

If you wanted to get really decadent, melting some of the chocolate into heated milk and adding sugar to taste would give you the base for the best hot chocolate you've ever had.

Unsweetened chocolate wouldn't do all that well in chocolate chip cookies instead of regular chocolate chips, because it's not all that pleasant to eat on its own. Melting it and audit it to the dough to make double chocolate chip cookies might be worth trying.
