Apple pie is classic, but too obvious

[Recipe filter] I have 6.5lbs of Fuji Apples and 4lbs of Asian Pears (~2900 grams and ~1800 grams, respectively). Please help me create awesome food with them. Sweet or savory - nothing's off the table.

No allergies or dietary restrictions. It's OK if the recipe is somewhat complicated.

If possible, please provide recipe links.

Not to state the obvious, but how about some apple turnovers? ;)

Use this recipe for slow cooked pork shoulder but swap the carrots for 3-4 apples or apples/pears, swap the beer for either hard cider or half Riesling, half water. If your pot has room, toss a couple of potatoes or parsnips in as well and a little more liquid. Also good: walnuts, mushrooms.

Roast chicken with apples and pears. No recipe link because all you do is rub the chicken down with oil, stick it in the oven at high temp with chopped apples and pears and roast!

I have no idea where this recipe came from, but I make it whenever I have too many apples on hand:

Apple Cake

2 and 1/3 c flour
2 c sugar
2 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
4 c apples, peeled and chopped
1/2 c butter, melted
1/2 c walnuts (optional)
2 eggs

combine flour, sugar, baking soda, salt, spices
add apples, butter, nuts, eggs
pour into greased, floured 9"x13" pan (batter will be very thick)

bake in 325 degree F oven for 45 minutes

This is basically the simplest thing in the world, and I don't know if it would be as good if you weren't as much of a vinegar fiend as I am, but I love roasted apples with balsamic drizzle. You can use junky fake-balsamic vinegar and it works fine.

I made applesauce in the Instant Pot (actually used a mix of organic, peeled apples, canned pears in pear juice, Irish butter, bottled lemon juice, regular table salt and cinnamon), then used a portion of the results in this easy applesauce cake:

1 cup applesauce
¾ cup brown sugar
½ cup oil
1 ¾ cups flour
1 teaspoon cinnamon
¼ teaspoon cloves
½ teaspoon allspice
½ teaspoon salt
1 teaspoon baking soda

Mix all ingredients together, using the order listed above. Put into a greased 8 inch by 8 inch pan. Bake at 350 degrees, for 40 minutes.

I used a 9x5 loaf pan, and baking took nearly 50 minutes in my oven. You could add raisins or other dried fruits, if you like (dust them in flour so they don't sink), use whatever oil you like (I used grapeseed), and change up the spices or quantities of spices. (The applesauce had that cinnamon in it already, and still I added an additional rounded tablespoon. I also increased the cloves to half a teaspoon. I was out of allspice, so I used nutmeg and about a quarter teaspoon of mace.) See the original at the link for more info.

The original applesauce and the later cake were both absolutely delicious, despite these bastardizations.

If you have a dehydrator, I'd dry all the Asian pears and spend the next few weeks enjoying what was once described to me as "Nature's gummy bears."
