What is the best book you know on the Dutch Revolt and subsequent Eighty Years War / Dutch War of Independence that ended with the Treaty of Munster?

The Dutch Republic: Its Rise, Greatness, and Fall 1477-1806 by Jonathan I Israel. OUP, 1995.

(Only about a third of the text is actually 1568–1648, but that's still about 400 pages.)
