Can I eat it, super old Costco cheese edition

Costco brand Manchego cheese with sell by date of 10/25/2016. Still vacuum sealed, no visible spoilage. Sadly forgotten in the back of the fridge.

I wouldn't usually eat something that is four months past its sell-by date, but pristine looking hard cheese is an easy yes, right? It's a two pound block, completely unopened, and mmmm cheeeeese.

I used to take care of and sell cheese. I would open this, smell it, and feel it. If it doesn't smell like cat pee or feel slimy, I would taste it. If it tastes good, I would eat it.

Manchego, especially vacuum-sealed in its own little world, can take a fair amount of neglect and maltreatment. FWIW, it likely didn't actually age in its sealed-in-plastic state - it needs some air to do that properly. But it's also likely still perfectly good to eat, so...eat it!

To increase tastiness potential, you might shave away the parts of the cheese that were in close contact with the plastic in case it has taken on some plasticine flavors.
