Is there a way to get back deleted emails?

Someone had my password and logged into my gmail and deleted some emails of mine... From the trash too.
I'm pretty sure gmail saves everything on their servers even after deletion, but the question is- Can I get those emails back? Several people at work have every reason to want them deleted so when I saw that my inbox was lighter I knew exactly which emails to check... and yep- they were gone from every folder and the trash.
I'm not sure when this person logged in. All I can see from the activity history on gmail is that someone signed into a windows computer in my city with chrome. That could be literally anyone in my office building and beyond and it's not helpful.
I now have a new password and 2 step verification, but that doesn't help me with the emails that were already deleted.
my computers and laptops are all PC and I use chrome or firefox if that helps at all.
