Creating a Screencast/Tutorial for an iPad App

What program(s) do you use to create an iPad app tutorial?

I've never done this before. My Googling has resulted in a somewhat hearty list of program options, but also some conflicting advice—some programs seem to do it all, and right from the iPad; but then I've also seen recommendations that one must first mirror the iPad to a computer and then use Camtasia, whatever, to do the actual recording. What do you recommend?

We do a lot of iPad app tutorials. We take screenshots and then do the tutorial in Educreations (example).

We have used Knowmia, too. It is more robust and has better editing features. http://www.knowmia.com/howto

These are not live shots like with Screencast-o-Matic, but it works for our purposes. Pretty simple and fast and all on the iPad.
