How to fix oven settings before Thanksgiving?

We have a residential Wolf 36" gas range, and the oven temperature is off by about 20-25 degrees, according to oven thermometer.
I can't find anything in the Wolf literature that came with it about how to adjust the temperature. This is NOT the same kind of oven as in a previous MeFi question -- there the owner couldn't remove oven knob. Here, I can remove it, but there's no obvious thing to turn or fiddle with.
royalsong, that would have worked on my old range. THis one, it is hard to tell what might be the adjustable part.I think I need Wolf-specific help. But, thank you.

Are you certain that the oven thermometer is correct? Those things typically have a pretty wide manufacturing tolerance, depending on the type... I'd check the oven with several different thermometers before I'd start adjusting!

Good point. I have tried two thermometers, and both indicate it's off. One said by 20, one said by 25ish degrees.

Do you have a user manual?

I have heard - though I have no reference - that some oven manufacturers will deliberately set the thermostat 25-ish degrees cooler when it is on the "convection" setting. Any possibility this is the case with you? This ended up being true for us (electric oven with convection).

A pot of water is a pretty damned reliable thermometer.
Assuming you are near sea-level, it should boil after a good soak at 225deg F.
It should stop boiling eventually, if you then drop the temp to 200F.
If you are at a higher altitude, adjust accordingly.

Oven thermostats aren't very linear so they should be adjusted where you do most of your cooking. For most people that is 350F.
