Vegetarian pressure cooking?

Give me your best vegetarian pressure cooker recipes.

I just got a pressure cooker and I am excited to use it. I know pressure cookers are great for making beans, but what are your favorite vegetarian recipes for pressure cooking? I'm partial to seitan/tofu/tempeh type stuff, but I don't know whether those ingredients would do well in the pressure cooker. Give me your ideas, please!

In any bean recipe substitute a sheet of kombu and a little of whatever oil you want for bacon/hock/whatever.

I'm not a vegetarian, but I actually much prefer it. It has no real flavor of its own in something as big as a pot of beans, it just pumps up the umami.

The Fat Free Vegan blog has dozens of great recipes tailored to a pressure cooker.

You should really get the Lorna Sass book though - well worth the price. I especially love her Thai chickpeas recipe.

Seconding Fat Free Vegan! I made this Creole Black Eyed Peas recipe earlier this week and it is now one of my top five favorite meals ever. Even my vegan hating brother loved it. I used an entire tbsp of sriracha and it is wonderfully spicy!
