What kind of creature is living in our backyard?
I live in Utah, and there is a small backyard pond next to the 'feature' shown in the pictures.
The motion activated lights have been randomly tripped during the night since we noticed this being built up.
Any ideas on what kind of roommate just moved in?

Rabbits? We have the same kind of ground cover, and every spring a bun-mom moves in with her bunlets.

Have you found any scat (poop)? That would go a long way to narrowing the possibilities.

Have you seen a burrow or lair, or is it just movement? Frogs or toads like that kind of damp, tangled bed of foliage with water nearby.

Any number of creatutres live in burrows. Only some have telltale signs. Fox dens for instance stink to high heaven.
My guess would be rabbits too.

What's the area around your home like? Looks like you are in SLC, are you in the foothills, near any ravines, a park, something more rural?
