How can I make Acrobat 8 load with my preferences for toolbars?

Working on a macbook. Ever since I switched to Acrobat 8 Professional from an older version, using the program has become such a pain in the ass. When I open a new document, there are no toolbars. Going to "show comments and mark-up toolbar" is the quickest way I've found to have the view size and page scrolling options show up on top.

Similarly, in the older version, I could easily pull out a pages sidebar in order to view thumbnails of pages for quick jumping and rearranging pages. I can still access this, though with limited functionality, but only as a floating palette.

Please help me make Acrobat awesome, easy, and ituitive to use again.
