Need Restaurant PnL and Menu Mix

Any restaurant owner or managers out there willing to share their PnL and menu mix with me?
I'm a hospitality management student in her final semester and my final project is to evaluate the menu of a restaurant and see if I can make it more profitable.
Is there a restaurant owner or manager out there willing to share their PnL and menu with me and I'll give you everything back when I'm done and you can look like a star to your boss :)
What I do is cost each menu item, compare it against the selling price, and figure out how they compare to each other and see if there are things that can be dropped from the menu or see if the prices can be tweaked to make the items more profitable.
I can do it with a chain by messing with the company's PnL from the Annual Report, but I'd really rather put all the work into a smaller place as I really prefer to support the independent owners.
Anyway, I know its a lot to ask and I've already asked at the local place where I'm a regular but she doesn't keep the kind of records I need (no Micros or Aloha system :)
