Can I eat this: French toast batter edition

I am making this French toast batter recipe. Can I leave the batter (includes raw eggs) in an airtight container in the fridge to use again tomorrow?
It's meant for four servings, and I'm only having one. I don't want to quarter the recipe as it wouldn't really work out with enough to entirely cover both pieces of challah.

As long as you cook the toast pretty well, it should be fine for a day or two. Or three.

You could half the recipe and then only have 1 more serving in the fridge to store? But yes, safe to keep for a few days.

I use an ad-hoc recipe like this for just me and use one egg to generously cover three pieces of bread, but I'm not sure how much challah you're using. I use watered-down Greek yogurt instead of milk and use that to adjust the richness.

not only can you do that; you could leave the bread in there too (as long as it's stale; you wouldn't do this with fresh bread, it would dissolve) and it will be super custardy when you cook it the next day.

^ Yes, you could make a strata with the remaining mix and some bread, too!
