The written word, delivered to my door

What print publications do you love? Print-format reading constrains my focus in a very helpful way. I want to lose myself in good writing and images, learn things, get informed, and get ideas for projects to make/cook/knit, in an inherently-meatspace-limited, non-infinity-machine form. I'm interested in in-depth writing and interesting photography. Not so interested in glossy top-ten-list click-baity surface-level magazines with a ton of ads, or aspirational lifestyle magazines.
I enjoy Science News and I'm planning to subscribe to Pom Pom.
Boat looked really interesting, but apparently they aren't offering subscriptions anymore.
Works that Work also looked potentially up my alley, but they don't publish anymore either.
Some of my interests: general longform journalism including some stuff on current affairs, Antarctica/the Arctic, the Midwest (especially the Upper Midwest -- Minnesota, Wisconsin, Illinois, Michigan), Chicago, Minneapolis/St. Paul, long-form journalism, scuba diving, marine biology, hydrothermal vents and chimneys, the deep sea, photography, cities and rural places, places generally, ecology, science, citizen science, engineering, architecture, engineering and architecture in extreme environments, innovative plumbing, some design, knitting, fashion, cooking, photography and underwater photography, making stuff, art, and friendly, positive, feminist smut (including kink). I'm very open to topics not listed if the magazine is awesome.
I am not going to subscribe to the New Yorker right now, though I do pick up an issue occasionally. I've subscribed to the Atlantic in the past, and I have National Geographic currently. I'm also considering the NY Review of Books and the London Review of Books but am planning to check them out at the library to see if I actually enjoy them before I commit.
So -- what *currently publishing* print publications do you love, that I might not have heard of?

Yes, Smithsonian magazine is wonderful. Also, if you have any interest in aerospace, their Air & Space magazine is outstanding as well. It covers the gamut from space exploration, the airlines, military, and general aviation. Did you know you can buy a perfectly airworthy airplane for about the price of a new car? It is my jam.

The Sun has a fantastic mix of in-depth and shorter pieces, including fiction, nonfiction, photos, and poetry.

I see you mentioned cooking. Cherry Bombe? Gather Journal?
RIP Lucky Peach which would have been perfect for this question.
Anyone interested in current affairs should subscribe to Foreign Affairs.
I'd also recommend typing variations of ["niche"/"independent"] + [subject you're interested in] + "magazine" into your favorite search engine . I did this just now for fashion and food and got this extremely extensive list of indie fashion magazines and this pretty cool list of food magazines. And, obviously, head to your local indie bookstores and browse the periodical section, I've found so many cool niche titles that way.

My aunt got my grandparents a subscription to Our Wisconsin a year or two ago and they've really been enjoying it and recommended it to several of their friends.
