What has been your experience with only eating gluten-free food?

Mefi, please share your experiences with me!

I'm wondering about what eating gluten-free has been like for you. I've read a few different questions on the matter, and now I'm looking for more of a general picture of GF usage and motivations for starting.

Specifically, I'm wondering:
Why did you go on a GF diet? (chronic pain, gluten intolerance, weight loss, healthier eating, etc.)
How long have you eaten gluten-free?
What benefits have you encountered from your GF diet?
What are the greatest hardships for you eating GF?
Has it changed the way your body reacts to gluten now? (e.g. intolerance)
Are you happier than before you went GF, or not?
