Freeze Dried Las Vegas Food

I saw a story, I believe on CBS a few years ago, about a program that took uneaten food from Las Vegas casinos, freeze dried it on the spot, and took it directly to homeless shelters.

The advantages were the food didn't go to waste since the law prevented them from reusing it, and the homeless shelters had more good food to serve. I have been trying to find links to that story and can't find them. Can someone send me a link, and if the program doesn't exist anymore, can someone send me a link about what happened to it?

Blast chilling v. freeze drying. Blast chilling makes a whole lot more sense.

Seems like an opportunity to mention the Emerson Food Act (pdf), more info, which allows restaurants and grocery stores to donate excess food without liability.
