I like Johnny Cash's cover of NIN's "Hurt" and Willie Nelson's cover of Coldplay's "The Scientist." Give examples of other covers in this genre.

"The Cleverlys" are a bluegrass band which does covers of pop music.

Some of their best:

Walk like an Egyptian
Gangnam Style
Superstition (Stevie Wonder)

Meet Glen Campbell might scratch that itch for you. I'm especially fond of Grow Old With Me (John Lennon cover) and All I Want Is You (U2 cover).

Johnny Cash also covers U2's "One," Beck's "Rowboat," Bonnie 'Prince' Billy's "I See a Darkness," Sheryl Crow's "Redemption Day," Soundgarden's "Rusty Cage," and Depeche Mode's "Personal Jesus" throuhgout his American Recordings series.

She's not all that old, but Lucinda Williams has a cover of The Pretender on the recent Jackson Browne tribute album that is great. Looks like Bonnie Raitt has a song on it too.

Garth Brooks put out a box set "Blame It All on My Roots" last year that includes 4 CDs worth of covers--lots of rock and pop covers on it, including things like Queen's Somebody to Love and Robert Palmer's Addicted to Love (here he is doing Bob Seger's Night Moves on the Tonight Show).

There's also a pretty strong tradition tradition of rock remakes in the bluegrass community, with bands like Iron Horse and the Pickin' On series.

Dolly Parton's done a lot of pop covers. Not mentioned yet is her cover of Collective Soul's Shine.

Glen Campbell's cover of GBV's "Hold On Hope" is beyond beautiful and presses the same buttons that Johnny Cash's "Hurt" does for me.

Emmylou Harris has done a ton of great covers. You definitely want the album "Wrecking Ball," produced by Daniel Lanois, which is just a masterpiece. I think my favorite track is this one, which was written by her one-time lover Rodney Crowell.

Not sure if you want to avoid the reverse, but Willie Nelson's "Always on my Mind" is best known by many as the massive pop hit for the Pet Shop Boys.

Likewise, Lynn Anderson's "Rose Garden" evolved into the synth-pop hit "I Beg Your Pardon" from the Canadian band Kon Kan.

Townes Van Zandt's version of the Stones' "Dead Flowers" seem like it would fit the bill somewhat at least.

If authenticity isn't required, the often-fun Pickin' On series might be up your alley.

Here in the PNW, 40 years ago, there used to be a local bluegrass band called "Dr. Corn's Bluegrass Remedy". Dunno if they still exist as a band, but they did release one album. The first cut on it is their cover of Gordon Lightfoot's "Early Morning Rain".

My opinion is that their version is better than Lightfoot's version. Not only because of better instrumentation, but they also changed some of the chording.

Oh my goodness, are you even watching Nashville? If not, you'll have missed this sweet little version of Ho Hey by the Lumineers.

Also, it's not exactly new pop music, but Viktor Kraus, Alison's brother, did a version, with her on vocals, of Robert Plant's song Big Log that I love.
