What was the bright pinkish-red cheese I had last night?
Firmer than Brie, but much softer than cheddar. Crumblier than Edam, but smoother than stilton. No rind or wax.
It was served with biscuits after a formal dinner, so it may be moderately rare/upmarket.

Port Wine. Best paired with Stoned Wheat Thin Crackers Hm!

+1 Port wine cheese. I used to love the Wispride brand, but i haven't had it in a long time.

Response by poster: Yeah, chrismear, I think it must have been Red Windsor/Windsor Red. The photos of Red Windsor I found before asking this question showed a cream-coloured cheese with a bit of red marbling, but the cheese I had was fairly solidly red. The photo of in your link looks a lot more like it.
It seems, according to Google, that port wine cheese is a spread, or comes from a tub, and the cheese I had definitely wasn't spreadable or cheese-from-a-tub.
