Build Mr. Met head

I'm interested in constructing a replica of the head piece worn by Mr. Met.
Does anybody know the best way to go about building a giant head like that of Mr. Met's or any of those Disney characters? This would be for a halloween costume.

Why? Because Mr. Met the adult encephalitic baby is the awesomest sports mascot ever. (And I'm a Red Sox fan.)
